Our asparagus patch has been producing beautiful stalks for several weeks now! Do you have fresh asparagus available to you either from a neighbor, friend, family member, or on your own property? Give this recipe a try!
4 hard boiled eggs, peeled and chopped
6 slices bacon, cooked and crumbled
2 T. olive oil
1 T. red wine vinegar
1 ½ tsp. Dijon mustard
1 tsp. Italian seasoning
Microgreens
Directions:
1. Bring a pot of water to a boil, add the asparagus and cook 2-3 minutes (until tender but firm).
2. Drain and immediately rinse with cold water to stop any further cooking.
3. In a small bowl, mix together the Dijon mustard, oil, vinegar, and seasoning.
4. Place the asparagus on a platter, top with egg, bacon, and microgreens. Drizzle with the vinaigrette just before serving.
