Lentil & Barley Soup has been around for generations, but this soup starter is anything but ordinary! With just the right amount of zip from black pepper and red pepper flakes, this soup can satisfy the whole family.
Additional ingredients needed: 4 c. broth, 1 c. water (or more depending on desired consistency), 1 14.5 oz. can diced tomatoes, undrained, optional: 8 oz. smoked sausage links (sliced)
Directions: Combine broth, water, tomatoes, and contents of bag in large pot. Stir, cover, and simmer for 1 – 1.5 hours (or slow cooker for 6-8 hours on low) or until lentils are tender. Stir periodically if cooking on stove. Add cooked meat at end of cooking time until heated through. Yield: about 4-5 servings
