Additional ingredients: 1 egg, ¾ – 1 c. milk, 2 Tbsp. melted butter or oil, 1 T. sweetener (brown sugar, honey, pure maple syrup, etc)
Directions: Beat together the egg, milk, oil and sweetener in a medium bowl, adding more milk until desired consistency is reached. Add 1 1/3 c. pancake mix and stir until just moistened. Allow to sit for 5 minutes. Cook on preheated and lightly greased griddle.
Yield 8 – 4”pancakes
